Spiral Vegetable Tart Recipe
This beautiful tart is as delicious as it is stunning, with a mesmerising spiral of thinly sliced vegetables set on a flavorful pesto and ricotta filling.

Cooking time: 50-60 mins
Serves: 6
Ingredients
Pie shell:
- Store-bought or homemade shortcrust pastry (try the RecipeTin Eats version)
Filling:
- ½ cup ricotta or goat cheese
- 2 tbs basil pesto
- Salt and pepper to taste
- 1 tsp fresh thyme leaves
Vegetables:
- 2 zucchinis
- 4 carrots
- 2 sweet potatoes
- Salt, pepper, and thyme to taste
- 1-2 tbs olive oil
Method
- Preheat your oven to 200°C.
- Prepare your pie shell by either using store-bought pastry or making your own. Blind bake it for 10 minutes with baking beads or rice.
- Mix all the filling ingredients and set aside.
- Slice your vegetables thinly using a mandolin or sharp knife, then lightly steam the carrots and sweet potatoes to soften them.
- Spread the pesto and ricotta filling on the tart base, then carefully arrange your vegetables in a spiral, starting from the center.
- Drizzle with olive oil, season with salt, pepper, and thyme, and bake at 180°C for 50 minutes.
